Best Low FODmap Easy Chicken Curry Recipe

This morning I am on day 3 of my own personal gut focused healing. One of the things I am doing is eating and drinking only low FODmap consumables. 2 nights ago I took 8 OZ ground chicken breast, a bunch of fresh spinach, sliced up some zucchini, shredded a carrot, fresh green beans… and whatever else fits the low FODmap ingredients in my fridge. I sauteed this all together with some cayenne pepper and there was my dinner. There was so much food, even though only 8 OZ of ground chicken breast because of all of the vegetables (of which you could barely even see the spinach anymore). I was anticipating being able to eat it, but not liking it; it was amazing! This lasted me that first night dinner and leftover for last night dinner as well as having yet some more left, so I decided to use it for breakfast. Here is where that chicken curry comes in!

I dumped the rest of the chicken and vegetable mix in a saucepan with a little coconut oil and cutup a hardboiled egg. I put a little adobe spice in it and about a cup of unsweetened coconut yogurt. I began stirring this together on medium heat and it started to look like chicken curry! I then added some curry, stir and put in my bowl.

Today is my 3rd day of leaving alcohol alone, focusing on healing my gut and reducing belly bloat and face swelling.

Waking up today, just being the 3rd day of this journey, I can already noticeably feel how much less uncomfortable I am in the gut area; it is already starting to relax and the bloating isn’t as hard or big. Looking in the mirror, I noticed much less inflammation in my face (swelling and puffy going down/redness subsiding). I also notice my gut area not looking so distended.

While this journey will take 14 days initially, there will be probably about 6 months for me to restore my liver and gut to where nature intended.
